When it comes to delicious and healthy recipes, crispy eggplant Parmesan stands out as a true gem. This dish is not only a treat for your taste buds but also a great option for those looking to cut down on calories without sacrificing flavor. In this article, we'll explore the ins and outs of making this mouth - watering vegetable recipe.

Let's start with the ingredients. You'll need fresh eggplants, which are the star of the show. Choose eggplants that are firm and have a shiny skin. Other essential ingredients include breadcrumbs, grated Parmesan cheese, marinara sauce, mozzarella cheese, and a few basic seasonings like garlic powder, salt, and pepper. The combination of these ingredients creates a symphony of flavors that will leave you craving more.

Preparing the eggplant is the first crucial step. Begin by slicing the eggplants into evenly thick rounds. You can aim for slices that are about 1/2 to 3/4 inches thick. After slicing, sprinkle some salt on the eggplant slices and let them sit for about 30 minutes. This process helps to draw out any excess moisture from the eggplant, making it crispier when fried. Once the time is up, rinse the eggplant slices under cold water and pat them dry with a paper towel.

Next, it's time to make the breading mixture. In a shallow dish, combine the breadcrumbs, grated Parmesan cheese, garlic powder, salt, and pepper. Mix them well to ensure an even distribution of flavors. Dip each eggplant slice first in beaten eggs (you can beat one or two eggs in another shallow dish) and then coat it thoroughly with the breading mixture. Make sure the eggplant is completely covered for that perfect crispy exterior.
